Keep the blade razor sharp by stropping it on a regular basis. We recommend using polishing compound and a strop. Hold the knife at a 15° bevel when stropping to maintain the sharpness of the blade.  A 15° bevel is equal to about the thickness of a dime when you are looking at how high the back of the blade should be above the strop when stropping.
